It is just pure luck. Getting ultra rare may take you months or even if you are really unlucky - over year ( happened to me on my first time ...took me nearly 2 years to get Crystal Unicorn....

Others are the same - you may get them randomly, when you least expect them. It doesn't matter what animals / how rare/what level you use - every combo has equal chances to result in ultra rare - ( and those chances are really really small...)
