I am currently waiting to start part 2/4 by visiting the Sandy Den. While I'm waiting should I be collecting from the cacti? Fighting scorpions?

It cannot hurt.
I am not there yet, but I anticipate that you will need the items from the cacti and the scorpions to expand to the other plots later in the storyline. Therefore, if you collect the drops now, it will be less you need to collect in the future.

You need to be collecting the Glimmeraloe and Scorpion Poison to craft the Everwater Potion to keep expanding.
You’ll need a lot.
I’ve turned the entire new area into a cacti farm. lol

Part 4 introduces a new Desert Permit (5 Rattles from fighting Rattlesnake, 5 Expansion Permits, 8 Glimmeraloes) to the Royal Exchange. I am fully expanded and the option to craft Expansion Permits did not re-open. I created a ticket with Storm 8, asking to add the Expansion Permit craft to Royal Exchange when Desert Permits are active.
