My family has favorite holiday recipes. I thought I might share. Does anyone else have recipe favorites?
Mrs. Purefoy's Raw Cranberry Sauce (we call it Cranberry Relish)
1/2 orange peel (use a zester or a knife to remove top layer of peel, leaving the white pith)
1 quart whole raw cranberries (can be frozen)
2 large oranges, peeled and segmented, removing pith and membrane (squeeze juice from remaining membrane)
2 large red apples
2 cups sugar (start with one cup and sugar to taste)
This recipe is less successful only using a knife. A food chopper or processor makes a difference. I mix it in the order above, using cranberries to further chop the orange peel. I move orange peel and diced cranberries to a big bowl for mixing. Then I chop oranges, and add apples. Mix all ingredients in the large bowl. Tip: the redder the cranberries the prettier the relish. Pale cranberries can make it look dull, but will still be so very tasty.
We make at least 5 of this recipe for family and friends who ask for it every year.
