What happens when you unlock next day early? I accidentaly unlocked day 6 for 100 gems (can't believe I did that!), and now I'm not sure how much time do I have now. Did I shortened my time left?

You didn't shorten your time left. It means you can start cooking and delivering the next day's dishes now. You will have a day plus to complete the day.

Technically no your time is not shorten. The event is 10 days (unless you finish the entire event with gems). However, you unlocked a day early but will have to wait for your original day to catch up before you can advance. For example if your day 5 was on Monday and day 6 was on Tuesday and day 7 was on Wednesday and you opened day 6 early on Monday. When you finish day 6 your game will lock down until your original day 7 would have opened on Wednesday. Meaning you will most likely have to sit out for almost 2 days..

I am at level 54, but dishes like fish and chips only for 3 points for the ship!? At least 4 points would be better.

I think it's only asked for if you've unlocked it.
