Question about collecting coins

I'm new to this game, and so I was a little confused about collecting coins from my animals. For example, animals like lions/elephants that return coins every 3-5 minutes, if I don't play for a while (say 3 hours) then does that mean when I return the coins add up or will I just be able to collect the coins awarded once for 3-5 minutes?
