Took a while maybe a level or 2 before I started growing ginger regularly. At least I was like you and worried but you only need one for a 3hr spice and the plots grow every 30 mins so now Im usually just deleting them to make room...ahhh!

I've had the 'Gingerly' quest for ages, growing herbs every hour or so and not once have I grown ginger from watering my plot. I have 4 plots available and just keep getting basil and garlic!
