Looking in the store for the best Nature (I am including animals also) item to get the materials needed for quests can be frustrating. Descriptions like "Choppable Foliage, Tree or Rock" do not give you any indication on which item will drop from which items. I hope the information given here will help.:
Mouldy log - - *Nightshade
Tree Stump - - Wood
Plants and Flowers - - Nightshade, Seeds, Experience, Honey and Tiny Flowers
Sunset Fern - - Nightshade
Dragon Fern - - Nightshade
Pile of Leaves - - One Pile in my test lot dropped some Seeds, but the others were a bust, giving only Experience
Red Tail Fern - - Seeds, Nightshade (Lovely as decor, but again on occasion, drops Experience only on some chops)
Purple Cosmos - - *Pile of Seeds, Tiny Flowers, Honey
Giant Fern - - Pile of Seeds, Nightshade, mostly Experience
Maidenhair Fern - - Nightshade, but mostly Experience
Glowworm Weed - - Nightshade
Stumpleaf - - I only got experience
Trees - - *Wood (bet you guessed that one) Dryads Breath, Withered Thorn and Spiral Wood (Goal item)
Thorn Draped Tree - - Wood and Withered Thorn
Thorny Naked Tree - - Wood, *Withered Thorn and Spiral Wood (Goal item)
** This tree summoned the most Cards, mostly paper-dropping Cards, but 1 dropped a Lode Stone. It could be coincidence.
Twisted Thorns - - Wood and Withered Thorn. NOTE: This item dropped NO Spiral Wood)
Oak Tree - - Wood (I chopped several and I got only wood.)
Cheery Tree - - Wood
Pneuma Tree - - Wood, Dryad's Breath, Spiral Wood (goal item)
Tripartite Tree - - Wood, Honey and Dryad's Breath NOTE: this item dropped NO Spiral Wood
Gilded Tree - - Wood, Spiral Wood (goal item), Dryad' Breath and Honey
Hollow Autumn Tree - - Wood, Dryad's Breath and Spiral Wood (goal item)
Sunset Elm Tree - - Wood, Dryad's Breath and Spiral Wood (goal item)
Cinnamon Tree - - Wood, very low drop rate for Spiral Wood (goal item)
**Although I only got a few jars of Honey I would not be surprised to find it was a random drop from all trees, Dryad's Breath could also drop more often than what I found.
Mushrooms - - Toad(on)stools, Cuppa Tea, Curious Mushrooms (Do not ask me, I have not seen any.) Personally I would not buy Mushrooms, you get brown ones every time you expand and the purple ones drop the same amounts as the brown ones.
Red Cymbidium - - Tiny Flowers, Seeds (Seeds drop rarely from this permanent flower, best bet is chopping up some Purple Cosmos.) Honey
White Rose Bush- - White Roses, Tiny Flowers, Seeds and Honey
Ponds and Wells - - Buckets of Water, Clay
Small Rock - - Stone, Iron, Coal, Silver and Gold (goal item)
Rock Outcropping - - Stone, Iron, Coal, Silver and *Gold (goal item)
Mossy Rock Outcropping - - Stone, Iron, Coal, Silver and Gold (goal item)
Animals
Goat - - Goat Milk and Goat Horn
Goose - - Goose Egg, Jewelled Egg and Light Feather (very rare drop for me at least)

I got Fairy Dust from just about everything. It was a rare drop the first couple of days, now I am maxed out in my inventory.
I know it seems like you chop a lot of Nature with most of the items listed, but I am convinced that sustainable Nature do not drop enough items to make it worth buying them. This does not apply to Nature items that you purchase for decor.
This guide should help you choose the correct nature item for the drops that you need. I have used my own experience to get the information. If anyone gets different results, let me know and I can change the list.
