    How can I tell what is evolving?

    Without going threw every habitat? Very annoying ~

    Am I missing something?

    No. You can't tell unless you remember what is evolving or you go through every habitat.
    I usually remember what I am evolving because its usually nothing because I have to save food for the high food costs of Midas, Immortal, Black Knight, and Onyx >.<
