Will anything else change? I know it costs 10 gems but will I loose my neighbors, gems or coins???

No you keep everything except for the rip off 10 gems to change it :P your wall posts will be your old name still

Yes. I would also just let your neighbours know that you have changed your name, to save confusion and so that they dont go and delete you or anything like that.

how do I change my bakery name?

Go to your profile and click on the change button to the right of your name, type in your new name and click o.k. But it costs 10 gems!
