coins in Bubble Mania

Can someone tell me what the gems in bubble mania mean? I have over 28,000 but have no idea what to do with them. the gems however accumulate so slowly, regardless of how long you play

Both coins and gems allow you to buy boosts for each level, if you want them. Things like rainbow bubbles or bombs, to help you pass levels.

Gems can also refill your energy.

You earn coins by playing levels, and you earn gems by completing challenges. Or you can purchase additional coins & gems with your iTunes account.

I have accumulated all these coins but I don't know how to use them or what the benefit of having them are. It is probably obvious but I can't figure it out lol. I have around 550,000. Can someone help me out with this?? Thx
