If I switch to original, will it affect the chances of breeding the Passion, Cupid, Chocolate etc etc dragons?

The Valentine's version is still the most up to date, with bug fixes and such. It's best to use the most updated version, even if its a holiday version that the holiday has passed. Once the original version is updated (or another special version is released), you can switch to it, and delete the Valentine's version.
