it depends on how long each crop takes to grow hon

So if it takes a day to grow for example?

Then a day later it'll wither. It's the same amount of time it took for it to grow.

Some of the crops that take less time to grow give you a little more leeway.

I've been told, but I haven't tested, that the 1-minute and 5-minute crops give you about half an hour. I assume that the 30-minute crops still give you about 1 hour total.

Nothing ever grows back if it's a crop, once harvested unless you replant. Trees and animals do, though.
