There are apps in the Android Market that you can download. Might need to buy one if you don't want to root your phone.
You might want to just jot down the number of gems you have. If you become a victim of the magically disappearing gem problem that people are posting about, a before and after screenshot won't prove that you did or did not perform actions to use your gems.
An application that'll capture your keystokes (don't know if one exists in the Android Market) or a head-cam is better for proving your case.
