I think there is something in the timing of the game, where the door must remain open at all times, or else, what happens, is that the game tries to "catch up" when presented with 10,000 plates all of a sudden, and "back sells" most of it to make up for the time the door is closed.
It isn't really apparent when closing the door for a few hours, but when closed for an extended period, the food flies off the shelf when you finally open.
The work way I have worked around it? The night I am going to cook something overnight, I will open my door, even if there is no food to serve, and close the game immediately. The heart rating remains at 100, and when I finally serve the food I have cooked overnight, it lasts for a decent period of time.
Thus, do not block your door for extended periods. Try that and see what happens.
