I don?t understand how we are supposed to finish these goals in 5 days. They should give us more time.

I finished it in a bit more than two days. It's all about planning ahead.

I was also able to finish in about three days. A piece of advice I would give is to put out as many Basic Stoves and Drink Mixers as possible (store other appliances temporarily if needed) so that you can cook all 3 of the dishes the task asks you to at the same time instead of individually. I also try to get as many of the event appliance as I possibly can because they are generally easy to build.

All you have to do is to start with the Lattes one day before the goal starts. Because the 5 days goals always start with six Latte. Then look here to check the next longer receipes and plan accordingly. Then you will easily finish these goals. 😉

I have not been able to find the goal prize. I have looked on my iPad 3 times and on my Fire tablet 4 times on different days. Any hints on how I can find it

It should be toward the front of your inventory where the Mystery Box items usually go. More than that, I cannot say as everyone's inventory is different due to limited time/box/removed items.
