Fighting Glimmer Golems from horses gives you plenty of Shield tokens. I usually fight 3 Blue Direboars then 1 Glimmer Golem.
When I have too many Sword tokens I do the Silver Trade and infrequently the Bronze trade to use up too many Shield tokens.
It's a balancing act. Hope this works for you.
They store on top of the 40 energy ( max). You can store OVER the energy limit, but if you do - you must collect more energy than you spend from your energy droppers.
Currently there is NO item, which allowes you to STORE energy into.
Basically - if you want to store- you must collect more energy than you use. This normally means collecting mainly from Energy Sources, and very few other items. As long as you use LESS energy than you use every day - you can store it.
You don't accrue more than 40 energy from the regular timer; people are able to store energy collecting from Wizard Schools, alicorns, and other energy droppers. If you have 7 weekly alicorns that give 40 each, and collect then all at once, you store 7 x 40 = 280 energy. Since you now have more than 40, the number won't go higher. You only get energy from the game timer if you have less than 40 energy stored. Then if you decided not to play for a week, the alicorns would repenish and you could again collect 280 energy (minus the 7 you needed to tap the alicorn). Now you have 280 + 280 - 7 = 553 energy stored.
I imagine some people who have been playing a long time have nothing in their Goal Book (except for the new storyline) and only want to do Monster Hunts, or maybe to get a special event prize, so they can store a lot of energy.
