I've used this since perhaps 2013 and always sell ~40k plates per day.

No it's always 100. If it is any lower, it jumps back to 100 within 10 seconds.

Ive been playing the game with my free will in mind since day one, years ago. I like to pick and choose which goals i take part in, and my bakery has been operating on enjoyment instead of constant goals and high-coin food. Sure, ive missed out on a lot of ovens and food, but i keep the ones that i like closest to me and occasionally get new ovens and recipes. And with that, i think ive succeded in having a happy bakery
