I hope there is someone from S8 around to respond.

Is the fireworks now breedable? Are any dragons that are brought back breedable? How can we know?

Fireworks is breedable. You can tell by reading the description of the dragon. It will say "Not available through Breeding" and it's "Origin" if we cannot breed it. So Sparkler, Fireworks and New Years dragons are all breedable.
