I go to a lot of bakeries and restaurants and see chairs backed up against walls, or directly behind other chairs.

They need a completely free space behind them to be "used" by customers!

Just a friendly tip :)

no. actually chairs can be accessed from just the side as well.

The above is correct. I have quite a few chairs up against a wall (due to multiple sets of 4 tables made into a circle/square with a centerpiece) and observed my bakery for a few minutes after making the design. The customers were able to access the chairs against the wall just fine, from the side.

This may be a different story if one had, say, a row of 20 chairs against the wall, facing out into the restaurant, with no spaces in between, and the tables all blocking access.

Just depends upon the design.
