earning coins after entire dish is finished?

i've just started restaurant story so sorry if this is a newb question...

i've noticed that no matter what type of dish i'm selling, i'm only getting a few coins from the customer as they finish. i currently have chocolate fondue in my restuarant and it that says i would get 3900 coins, is this only after ALL of the chocolate fondue has been finished?

yeah you have to serve all the food and you get coins as customers finish the dish.
