How do you not lose customers, or food when you are on vacation and will not be playing the game for a few days?

You can allow customers access to the host table and to one chair & table. Your "happy rating" will drop but once you "open" up again by allowing access to all your chairs your happy rating will go back up.

You can also try to create a maze so it takes a long time for your customers to get to and from tables.
