how do coins work

Why (when not purchasing items) does the coin level go up and down? Shouldn't it just rise when people are buying food?
I'm brand new and just trying to figure it out. Thanks in advance.

You have to pay to make food also.

It costs coins to bake food (-coins) but you also earn XP (+numbers) for each recipe you cook so there will be numbers + and - as you cook recipes. As the food is eaten you see +4 or whatever coin value earning that food has. I guess I should clarify my question. I know that it costs money to make food. Let's say I purchased food to make then I served it. My coin count continues to fluctuate both going up + 1, +4 etc yet I can also see the coin count decreasing without making additional purchases. This is what I am really trying to understand. Thanks in advance.

Since when? And is this happening when you're doing nothing but look at the restaurant? Or when you exit and reboot the game?
Maybe it's display bug.

This use to happen to me, it stopped after a few days.
