So I used the mastery spice a few times to help me with some mastery goals, but they don't seem to work. How many times exactly do I need to use the mastery spice before a recipe will be marked as mastered? I thought 1 spice would give me 1 mastery star...

The Mastery Spice only gives you one little star, not a big star. If you look on the picture you supplied of French Toast you'll see at the bottom it states 3/100. That means you've now cooked it on level 3, 3 times out of 100. You need to cook it 100 times at that level to complete it.

When you use the Mastery Spice, it only gives you an extra baby star. So, say you have 4/100 on the stove right now, you use the Mastery Spice on that dish, when it is done cooking and you remove it, you'll have 5/100 instead of 4/100 shown. The Mastery Spice gives you one extra dish only.

Be very careful as you don't want to use it when you're about to level up or complete the level entirely, as then it won't register. For example, say level 2 had been 49/50 (I don't know what it really was), and you used the Mastery Spice. It wouldn't have logged it as 50/50 and 1/100, it would have only logged it as 50/50 and 0/100. It does not carry over! If you were 48/50 and used the Mastery Spice, then it would have logged it at 50/50 instead of 49/50, hence making you complete the level without having to cook yet another dish.
