How do you catch skunkupines etc in one of the traps? I cant work this one out

You don't catch them. You import them already trapped. Buy it, place it and then chop it. Make sure you do not have a monster or troll king in your kingdom at the time.
In summary: It gives you one, NOT takes one away.
