What are Collectibles and How do you use them?

I'm new to this game and see where I collect items at certain times, but I'm not sure how or why this happens? What do I do when all the items in a group are collected?

When you tip, or cook you will get those items randomly. When you receive 1 of each you can redeem the item that is to the far right for that row. In order to redeem you must have at least 1 of each of the items in that row.
