Disappearing guests

I've noticed a few things since starting this TL game. 1. Guests pay on the way out. 2. When you hit design or take a call (for ppl on their mobiles), the guests disappear. My question then is - are all the guests who are currently at table when they disappear not counted or not paying? I was able to tell that the food they sit down with is deducted. Just wondering. Thanks for yr help. 😎

I think the amount you collect in revenue is based on the number of tables and the distance needed to get from the Host Table to the table. Not sure if "re-setting" the visitors animation hurts your profits.
