As above. Is there any difference between watering trees that have flowered alredy, vs those that are still plain green?

Nope. Trees which have flowered are just a pretty way to show how long it's been since a tree was last harvested, in the same way that crops have various stages of growth.

Doesn't matter whether the trees are flowering or not, the difference is when the farmer is harvesting. Harvesting fruit trees that have been watered actually carries a bonus versus an unwatered tree.
