Why my languages display in dragon story suddenly change to simplified Chinese?

This is most likely because your device is set to Chinese.


If anyone else experiences this issue, simply go into Settings >> General >> International >> Language, then select whichever language you prefer.

Please note, this changes the DEVICE language. Be sure you don't accidentally change to something you cannot understand. You may have a hard time trying to navigate back to the Language menu.
