What is the Spring used for?????

I could use some help. I need to know what the Springs are used for? They are no longer used for the candy cane oven and the truffle maker is no longer sold. Can't figure out how to use my Springs now.

No other appliance needs a spring... But truffle maker might be brought back just as the candy cane maker was.
