How to spend gems

Besides decorations, what's the point of gems?
If you use gems to unlock an appliance spot early, does it give you an extra appliance, or do you still have to wait til the next level to get the next appliance?

I save up gems so I can easily speed up food or buy tables+chairs.

When you use gems to unlock an appliance you get an extra slot. If let's say you're on level 67 and you buy an appliance slot, you get a slot, then when you reach level 68, you get another slot because that's the level it's supposed to unlock.

personally, i prefer spending gems on appliance slots, the more appliances you have, the faster you can master recipes, the more gem rewards you'll get.

Everytime i get 49 gems i buy a slot so that i can avoid gem traps.

Thanks so much. I have enough gems to buy an appliance slot, but I was worried I'd waste them if it didn't actually buy another slot.
I don't mind the wait times for recipes too much. I usually cook the long ones at night or when I'm away for the weekend, which is often.
