For example, I was making 4 batches of chocolate mousse (it takes 4 hours) and an hour later when I went back in..after some tipping and visiting, I came back to my restaurant to find that 3 of the batches was back to the "prepare" stage! So I had lost an hour of cooking time..one batch will be ready on time and the other 3 are an hour late..
