Is it a good idea to get one of each of the appliances in case some are discontinued? I know that some have only one recipe. Might be good to have appliances built in case a goal requires that appliance and needs building? I do not have all the appliances but have several grills, ovens, drink machines and am starting to get other appliances and put some in storage for when I have more slots.

what do you recommend? What is not worth getting?

I recommend building more than one appliance of a particular machine. I had the misfortune to built a seasonal oven once, and mastering the recipe took forever. You can always built the appliance first and put them in storage if you are not using them. I can not answer which is not worth (refering to the ones for coin purchases) getting since I like to master as many recipes as I can for gems.
