Can you explain your numbers?

It looks to me like you are saying that if you use one machine to make 83 batches of each type, your net profit (food profit less cost of machine) is $843,970 but if you use 26 machines to make 83 batches of each (ie just over 3 batches of each on each machine) you lose $31,030?

The objective is to cook each dishes 83 times in order to reach Level 4 of each dishes (and gain 2 Gems)
If you cook all three dishes 83 times, minus the cost, you should gain a gross profit of $891,420. This does not minus the stove cost ($35,000) yet.
It depends on how many stoves you are building that add up to the stove costs. So if you build 10 Shaved Ice Machine, means $35,000 x 10 = $350,000 as your Stove Cost.

So net profit is $891,420 (gross income) - $350,000 (cost for 10 Stoves) = $541,420

The only variable to master all three dishes that affect your net income is the number of stoves you are building. In this case, if you build more than 25 stoves, you are making lost. Simple as that

OK I get it now. You didn't mention mastery as your goal in the first post.

It will come down to what your priorities are. Mastering the recipes on the Shaved Ice machine can be done with at $856,420 profit, or it can be done at a huge loss, as you have shown in your calculations. The number of machines is just one variable - another one is time. The most PROFITABLE way to master all the Shaved Ice recipes is to get ONE machine, and run it 83 times for each recipe. It would take you 48 days, but if you want to end up mastering the recipes with as little capital outlay as possible, then that is the way to do it. Or, you could do it in less than 2 days, but be out of pocket by nearly $20k.

Something else to think about though - what do you intend to do with the machines after you have mastered all the recipes? Remember, the machines don't just die after you have mastered the recipes. If getting the gems ASAP is so important that you will fork out $910,000 for 26 machines to do so, then will you keep using them afterwards? If you are only interested in mastering, then you can sell them after, for $3,500 each. So you get $91k back for 26 machines, turning your $18k loss into a $72k profit. Of course, you could also keep them and keep churning out goodies.

Personally, I would rather only buy one or two of machines with such a low number of recipes, and work gradually to master a few different things at the same time. Right now my main focus is profit (I soooo badly want to expand!!) but when I get there I will look at mastering. With the 10 slots I have at the moment, I'd probably keep 5 for regular ovens, 3 for drink machines and 2 for any specialised machines that I am mastering. Then keep all the special machines when I have finished with them, and use them from time to time just for the variety. But that's just me.

This is very depends on how many stoves slots you have or plan to have, and how optimise your time you wish. I currently have 24 slots of appliances. My strategy is to have 21 stoves for each type of applicance, so that I can master each dish in just 4 rounds of cooking. 21 times x 4 rounds = 84 with an extra one as bonus profit before move to another dish

But with the chart above, and I realised that probably I wouldn't need 21 to optimise my profit. So I am thinking of cut it to half, down to 11, then I can cook only 11 times x 8 rounds = 88 with an extra five as bonus profit. and I can cook two type of dishes in parallel, takes twice longer the time to earn a Gem, but stretch out still the same but my cost are actually 50% less!

Hm... this explains a lot.
Thanks for the information!

I only buy 6-7 machines and master 2-3 different recipes at a time but my food just DOES NOT SELL and I have so much food already :(

You might need to review how you arrange your seats. If you have no 2nd door, get one, so that you can rearrange your door in an optimised entrance.
Then arrange all your seats closest to the exit as possbile. So that those Ewoks can come in quicky, sit down quicky, eat quickly, pay quicky, and exit quicky. Think of it like a fast food chain store. You want them come, buy, pay, and quit ASAP, no loitering.
You only need around 26 seats, you can test it by releasing your Ewoks into it, try reduce your seats until soneone leave unhappily. Then add back a seat and that is the optimised seat
I suggest you arrange the seat in a T shaped alley, then you will optimise your sales.
