How long can a dish sit before it goes mouldy? I'm leaving my restaurant open so it is getting eaten but I'm worried if I stock up too much it may go off before its finished.

i am not sure what you are talking about, as in where the dish sits before it goes mouldy
If your dish is sitting on the appliance, meaning you havent tap on it to serve it yet, then it goes mouldy or rather, burnt in twice the time it takes to cook. Meaning,if it took 2h to cook the food, it takes about 4h for it to spoil and the disgusting fly to appear on top.
If your dish has been served and is sitting on the counter already, then it would not spoil at all.

Sorry I actually meant when it was on a counter. I thought they did go mouldy eventually as I see this sometimes other bakeries when I tip

no problem. What you see in other bakeries, the mouldy food is on the appliance not counter. When appliances are placed together, it can look like the counters, particularly if they are white.
