The 1M plates will last about a month if you don't bake anymore. And will earn 4 million coins.

My goal was to try to get to under 1M plates. I dropped that goal in the last week due to the the quantity changes.

sorry this might sound silly....but where can I see in my bakery how many plates I have in total.... without adding up each one individually ?

You have to add each one up individually.

Once you do that, you can estimate how many plates you have. All the counters sell at about the same rate. So note the plate count, and sometime later note the plate count on the same counter, subtract to get how many sold, multiply by the number of counters and subtract from the last total. Then add in the count of the food you placed.
