spoiling food time limits

Is there any *****s to know how long a dish can be completed and not served without spoiling. How long do we have? Each dish be listed for *****s as to how long it takes.

I believe it takes the same amount of time to spoil as it does to cook. So if an item takes 2 hours to cook it should have 2 or so hours after it is finished cooking before it will spoil.

I think they give you more time for shorter recipes. Yesterday I started up Restaurant Story 4.5 hrs after I started grilling 2 hr hamburger sliders, expecting them to have flies. They were still okay.
