I also find, by having lots of variety it keeps the customers and the happiness rating high.

Some items make more $ per hour, and some items sell for more per item. The trick is, is to do a little of both. You cook what makes more per hour when you are awake and have time to manage the shorter recipes to stock up the counters, and then do the longer recipes that cook items that are worth more per plate. If you cook only the shorter recipes that pay more per hour, you will find yourself with a lot of food on the counters that can't move as fast, even if you stack chairs and tables until there is hardly any walking room.

If you have 30 tables and chairs where the customers can sit and eat, you're going to get the same rate of customers coming in and eating food regardless of what food is on your counters and how many counters you have with food on them.

You want to make sure you don't have too much food on your counters because you're only going to get about 22-28 or so customers per minute, and food on your counters not selling is profit that you won't see.

It doesn't matter whether you have one counter with a whole lot of food, or many counters with a variety. The rate is still the same.

If you make longer recipes that cost a lot to cook and have a high yield, you can find yourself spending as much to make food as you can sell in the time period it takes to make the food, and at the end still have a lot of food on your counters that won't sell.

Having enough food is all you need really to have happy customers, not variety (this way you also don't need various counters). So if you have time to play for awhile, master the french toast, then omlettes, the fruit salad perhaps. Working on just one dish makes the mastery go faster. Mastering levels 1 & 3 gives $2,000 so if you aren't worried about getting gems yet then you just need to complete the 3rd mastery level for bonus money. Making 1 type of food means u only need 1 counter by the way since same stuff will combine to same counter, so store extra counters to make room for tables and chairs if you need it.
Save money and don't worry about deccorating early in the game. And should you want to use ovens and don't have an empty appliance slot, store the stoves then buy the ovens (just don't run out of money to make foods)
