To name or change your restaurant:
Go to the "main" box in lower left corner of your restaurant. Then go to messages box top left, then profile. Click the box to type in a name or click the change box to change the name of your restaurant(this options may cost you gems)

Put the chair where you want it to go (whatever side of the table) it will go to the table naturally.
