do you lose anything?
if you have two counters with the same item on them, will the remaining plates combine?

Yes two or more of the same items well merge. if you have new item ready to place the game well prompt you to buy more counters if you don't have enough. You only lose item if time expires, before placed.

I think that covers everything...just remember: the food expires in about the same time it's made. So if you have 12 hour item, only a few plates of an item left and no counters in storage, just wait for the food to sell out. If you have a 5 minute item and lots of plates of all the food, even with no counters in storage, buy one or you'll lose the money for it.
