Flames?

When I mix/serve drinks, little flames pop up along with the XP and coins. What do they do?

Well, both coins & XP are for your benefits. The XP is to level you up. Coins are the cost that being deducted when you mix the drinks.

Ok thanks but I was wondering about the little flame icon that also pops up. I noticed under the drinks when you go to mix a new one, there's a little bar that fills up red the more you get a flame icon when you make or serve drinks. Is this like a way to level up drinks or master them?

Yes I believe the flames show you are earning mastering points for each drink you prepare and serve.
