So If someone want to get the Tiger's eye they better have the bat dragon ready. Gemstone/Bat = Tiger's eye. This going to be fun.

Yes for iOS currently you should be able to breed Topaz+Night and get Tiger's Eye... along with 27 other possible outcomes.

I think to breed the Gemstone Dragon we will need to breed Blue/Green.

The gemstone type seems to be adding blue/green to the pool. If this new type works like all the new types do it splits to its base colors... so blue/green.

What do I need for Topaz ?

Gemstone/Air = Topaz I believe. I think before you have any of the gamestone dragon. The up coming new gemstone dragon is the gate to them all.
