What does "Manage Counter" do?

Hi, when I tap on a counter to "Manage Counter", I see 2 options - (1) Clear this Counter and (2) Keep the Food.
What does each of these do? Please help. Thanks!

If you clear your food, you Delete your food. You empty the counter. Which means you do not get the coins for whatever remaining servings were left.
